Preparation and usage:
When combined with bicarbonate of soda, cream of tartar makes a raising agent to use when baking scones, drop scones and cakes. Make a simple baking powder by combining 1 tsp bicarbonate of soda with 2 tsp cream of tartar. Cream of tartar is also often added to icing to give a creamy texture, or to egg whites to increase the volume of beaten egg whites when making meringues and pavlovas.
